Garam Masala is the archetypal Indian spice blend. Homemade masalas (spice blends) add a beautiful diversity of tastes and aromas to your dishes. In this post, I provide two family heirloom garam masala recipes: one conventional, everyday garam masala and one true Punjabi style garam masala.
A Punjabi Chef came into the shop years ago with his mother’s recipe for this spice combination. In exchange for grinding and combining the items, we were given the recipe. Unlike other turmeric-based curry powders, our Garam Masala is made with coriander, cardamom, and black pepper. Kalonji, commonly known as nigella or black cumin, is also used in this combination. This flavorful mixture works well as an all-purpose Indian seasoning for everything from lamb and pork to seafood, veggies, and potatoes. To maintain the taste, sprinkle this on meals at the end of cooking. Coriander, pepper, cinnamon, cardamom, caraway, charnushka, ginger, cloves, and nutmeg are among the ingredients.
